I anticipate using this dried zucchini in soups or stews. We’ll see what more I can think of in the dead of winter…
Drying zucchini makes it sweeter, almost tropical in flavor.
- Zucchini sliced in half lengthwise
- Lightly salt the cut side
- Dehydrate at 120 deg F until completely dry - about 24 hrs
- Store in an airtight container at room temperature for up to 6 mos
