Fig, Bacon & Balsamic Appetizers

Fig, Bacon & Balsamic Appetizers:

Serves 4

Ingredients:

  • 6 Fresh Figs, washed and sliced lengthwise
  • 1 Cup Balsamic Vinegar
  • 1 teaspoon Fresh Rosemary, minced
  • 3 slices Bacon, cooked crisp & chopped finely
  • 4 Tablespoons of a rich, soft cheese, preferably Bleu or Goat Cheese

Method:

  1. Combine balsamic vinegar & minced rosemary in a small saucepan; heat to a simmer
  2. Prepare figs and bacon
  3. Put 1 teaspoon dollops on each fig half
  4. When balsamic has reduced to a syrup, drizzle over plates & figs
  5. Sprinkle bacon over top

This can also be made with prosciutto, instead of bacon. Either cook till crisp, chop and sprinkle, as above, or wrap the figs & cheese and sautee or grill till crisp.
