Fig, Bacon & Balsamic Appetizers:
Serves 4
Ingredients:
- 6 Fresh Figs, washed and sliced lengthwise
- 1 Cup Balsamic Vinegar
- 1 teaspoon Fresh Rosemary, minced
- 3 slices Bacon, cooked crisp & chopped finely
- 4 Tablespoons of a rich, soft cheese, preferably Bleu or Goat Cheese
Method:
- Combine balsamic vinegar & minced rosemary in a small saucepan; heat to a simmer
- Prepare figs and bacon
- Put 1 teaspoon dollops on each fig half
- When balsamic has reduced to a syrup, drizzle over plates & figs
- Sprinkle bacon over top
This can also be made with prosciutto, instead of bacon. Either cook till crisp, chop and sprinkle, as above, or wrap the figs & cheese and sautee or grill till crisp.
