Propagation
- Preferred method of propagation is by seed:
- Indoors:
- sow seeds 8-10 weeks before last frost
- plant outside after last frost, when the soil has warmed to 50 degrees F
- Outdoors:
- sow seeds in late spring, after last frost
- seeds should be sown 1/2"-3/4" deep (although one source said to plant them 2" deep) and 1" apart
- thin to final spacing (see Planting Out)

Nutritional Benefits & Values
- crunchy and mild, Jicama is a good substitute for water chestnuts or bamboo shoots in salads or stir-fries
- makes a crisp and delicious low-calorie snack
- texture is like raw potatoes; flavor is sweet and starchy

Toxicity
- ripe pods, leaves and vine are all poisonous
- seeds are poisonous due to the toxin rotenone, which is used in pesticides
Cooking
- Preparation
- peel off the rough brown skin and eat the white flesh raw or cooked
- Cooking Methods
- usually eaten fresh
- eat fresh on salads or vegetable plates
- marinate and stir-fry
- add to soups
- fresh seasonings: salt, lemon or lime juice, chili powder
- recipes with jicama often include cilantro, chiles, ginger, citrus, soy sauce, sesame

French Beans
- actually not french at all...they originally came from the Americas
- French Beans are wind-pollinated, so they fruit more reliably than runner beans, which are insect-pollinated
- also known as:
- Snap Beans
- String Beans
- Kenya Beans
- Kidney Beans
- just a categorization of how long the bean was left on the plant
- also known as Haricot Beans
- left to ripen fully on the plant
- when dried, they can store for many months

Harvesting & Storing Beans
Days to harvest
French Beans
- ready within 2-3 months of sowing
Runner Beans
- take at least 100 days to harvest
Cues to harvest
French Beans
- Green Beans
- harvested young, slender, and tender
- as soon as the pods start appearing, start picking; the youngest & smallest beans taste best
- keep picking regularly, at least 2-3 times per week, the more you pick, the more they will put out (as long as they are still flowering)
- harvest before the seeds start bulging, when the beans snap off the plant and snap in half cleanly
- continual harvest is essential for prolonged bean production
- Bush, or dwarf, varieties should be picked when they are 1/4" - 3/8" diameter
- Filet varieties should be picked daily, and pick them before they get over 1/8" in diameter, for peak flavor
