Time of Pruning
- figs are pruned every year in early spring, after any danger of prolonged frost has passed.
- In cool climates, summer pruning is also necessary. see "Cool Climates: Summer Pruining", below.

Fig, Bacon & Balsamic Appetizers:
Serves 4
Ingredients:
- 6 Fresh Figs, washed and sliced lengthwise
- 1 Cup Balsamic Vinegar
- 1 teaspoon Fresh Rosemary, minced
- 3 slices Bacon, cooked crisp & chopped finely
- 4 Tablespoons of a rich, soft cheese, preferably Bleu or Goat Cheese

How to Dry Figs in a Warm & Dry Climate:
- Wash figs, trim imperfections
- Slice figs in half, lenthwise
- Lay on an old window screen outside, cut-side facing up
- Lay screen or cheese cloth over the top to keep the bugs out
- After a few days, check on their progress. done is when they are dry & leathery on the outside, and only slightly sticky inside when you cut them open
To dry figs in a not-so-Warm & Dry climate, you will need a dehydrator.
