Summer Minestrone

Ingredients
  

  • fresh shell beans
  • chicken broth or vegetable broth
  • onion diced
  • garlic minced
  • 1 sprig rosemary
  • 1 sprig thyme
  • tomatoes diced
  • zucchini or any summer squash diced
  • 1 handful basil fresh
  • parmesan grated

Method
 

  1. Simmer fresh shell beans in broth with diced onion, minced garlic, and a sprig of rosemary and thyme
  2. Add diced tomatoes and zucchini for the last 10-15 minutes of cooking
  3. Finish with a handful of fresh basil leaves and a shower of grated parmesan
