Dried Zucchini

Drying zucchini makes it sweeter, almost tropical in flavor.

Ingredients

  • Zucchini sliced in half lengthwise
  • salt

Instructions

  • Lightly salt the cut side
  • Dehydrate at 120 deg F until completely dry - about 24 hrs
  • Store in an airtight container at room temperature for up to 6 mos

Notes

Bar Tartine recommends slicing it thin and adding it to winter salads, or as an addition to broth dishes, where it rehydrates and becomes tender
