Dried Zucchini – from Bar Tartine

I anticipate using this dried zucchini in soups or stews. We’ll see what more I can think of in the dead of winter…

Dried Zucchini

Drying zucchini makes it sweeter, almost tropical in flavor.

Ingredients
  

  • Zucchini sliced in half lengthwise
  • salt

Method
 

  1. Lightly salt the cut side
  2. Dehydrate at 120 deg F until completely dry - about 24 hrs
  3. Store in an airtight container at room temperature for up to 6 mos

Notes

Bar Tartine recommends slicing it thin and adding it to winter salads, or as an addition to broth dishes, where it rehydrates and becomes tender
