The stated maturity is 85 days, so this could be 85 days from transplanting, or 85 days from germination, depending on how the data was intended. Refer to your source for the seed/plant to know for sure.
It will flower at maturity – then you will be waiting for the flower bud to swell big enough for harvesting, but before it starts to break (spread open).
